"La Gaufre de Liège" was invented in the XVII century by the cook of the Prince of Liège. The prince asked his chef to create a cake based on chunks of pearl sugar . The cook is the idea to bake a brioche dough in a waffle with pearl sugar mixed with the preparation. A vanilla scent was revealed during cooking and this new packaging Prince and this recipe waffle was a great success and is now part of the culinary traditions of the region of Liège and then spread throughout the kingdom of Belgium.
